Basic Gravy
2 tsp fat drippings
2 cups liquid water, broth or boullion
2 tsp corn starch
¼ cup col water
Desired seasonings

Basic Gravy
Measure fat into roasting pan. Stir in liquid. Cook over medium heat, stirring to loosen browned particles. Remove from heat. Mix corn starch and water. Stir into pan. Add seasonings. Stirring constantly, bring to boil over medium heat. Boil 2 minute. Makes 2 cups.

Herb Chicken Gravy
Use 2 cups chicken boullion. Add 1 tsp chopped parsley and ¼ tsp poultry seasoning.

Fruited Chicken Gravy
Use 2 cup chicken boullion. After boiling 2 minutes, stir in ¼ cup orange marmalade or apricot preserves until smooth.

Onion & Mushroom Gravy
Sauté 1 cup chopped onion and ½ cup chopped mushrooms in 2 tsp fat in roasting pan for 5 minutes. Then add 2 cups beef boullion for liquid.

Easy rule of thumb - 1 tbs corn starch = 2 tbs flour.
