Ingredients: Gluten Free Biscuits
Ingredients: 2 cups gluten-free flour blend (recipe below) Pinch of salt 2 ½ teaspoons baking powder ¾ cup organic half & half or full-fat coconut milk 5 tablespoons grass-fed unsalted butter, cold and cubed Quick tip: Make sure the butter you use is really cold!
Gluten-Free flour blend: 4 cups organic rice flour (white or brown) 3½ cups organic tapioca starch 1½ cups GMO-free cornstarch 1 cup organic millet flour 1 cup organic dry milk (blended into powder)

Directions:Directions: 1.) Preheat oven to 325° F. Mix the dry ingredients in a bowl. Using a food processor (or a pastry cutter), pulse in the butter until the pieces are no larger than a pea. Carefully mix in the half & half until all the ingredients are moistened.
2.) Roll out until the dough is about 1-1½” thick, cut out and place on a parchment lined baking sheet lined. Repeat with the extra dough if necessary. Bake for about 15 minutes, or until golden brown.

Notes: Dad (gpa) grew up with Grandma Campbell always having a typical dinner or breakfast include fresh biscuits, warm from the oven, with lots butter and honey. So we try not to have a lot of gluten so I wanted to try to make them gluten- free. So these turned out light and buttery and almost as good as Bisquick drop biscuits. I’m definitely going to make these again!
