¼ C. lime juice
1 garlic clove, minced
1 tsp. chili powder
½ tsp. ground cumin
2 whole skinless boneless chicken breasts, cut into strips
1 medium onion, cut into thin wedges
½ medium sweet red peppers, cut into strips
½ medium yellow pepper, cut into strips
½ medium green pepper, cut into strips
½ C. salsa
12 flour tortillas (8 inches)
1½ C. (6 ounces) shredded cheddar or Monterey Jack cheese

Directions:
Directions:
1. In a small bowl, combine lime juice, garlic, chili powder and cumin. Add chicken, stir.
2. Marinate for 15 minutes.
3. In a nonstick skillet, cook onion, chicken and marinade for 3 minutes or until chicken is no longer pink.
4. Add peppers; saute for 3-5 minutes or until crisp-tender. Stir in salsa.
5. Divide mixture among tortillas; top with cheese.
6. Roll up and serve.

Yield: 6 servings. (228 calories each) 353 mg. sodium, 39 mg. cholesterol, 19 gm. carbohydrate, 17 gm protein, 12 gm fat

I like to warm the tortillas for a few seconds in the microwave just before serving. These are so delicious. Larry likes his with a little dollop of sour cream prior to the roll-up! Boom!
