Ingredients: 2 lbs. lean ground beef Lawry© Seasoning Black ground pepper 1 green pepper, chopped 1 large onion, chopped 3-4 ribs of celery, chopped 1 cup minute rice (uncooked) about 3 large potatoes, peeled and sliced thinly 1 can of cut green beans (or more, if desired) about 3 carrots, peeled and sliced thinly 1 quart canned tomato juice (I sometimes use tomato sauce to equal 32 oz.) We like the liquid to be a little dryer.

Directions:1. Layer ingredients into a deep 9 X 13 baking dish after spraying with non-stick spray in the following order... a) ½ of ground beef - press evenly getting into corners b) dry rice (uncooked) c) sprinkle on top ½ the chopped peppers, celery, and onions c) sliced carrots d) sliced potatoes e) evenly drop the last ½ ground beef f) sprinkle on top the second ½ of chopped peppers, celery, and onions g) Lawry seasoning and black pepper
2. Slowly pour the quart of tomato juice over all.
3. Cover casserole with foil and place into a preheated 350º oven and bake about 3 hours. The last hour of baking, remove the foil so the top can brown and excessive juice can somewhat evaporate. |

Notes: This is definately an old family favorite that our Mom made quite often. It's a very hearty and flavorful dish and the bonus...it's loaded with yummy vegetables. You don't need to prepare much else for the meal, maybe just a salad or applesauce and a dinner roll. Of course, we usually had to end every meal with a big bowl of icecream!
