½ cup white sugar
½ cup hot water
¼ cup white vinegar
1 tsp salt
1 large cucumber, thinly sliced
1 large onion, thinly sliced

Directions:
Directions:
Whisk sugar, hot water, vinegar and salt in a bowl until sugar dissolves.
Stir cucumber and onion into the sauce.
Refrigerate at least one hour to soften the vegetables and reduce pungency of the onion.

I doubled recipe for club. Used a Mandolin to get onion and cucumber thin, although I made this dish before and sliced everything with a knife and vegetables were thin enough.

I use about half the salt indicated in ingredients
