1 lb. lean ground beef
1 cup soft bread crumbs
1/2 cup grated Romano cheese
2 tbsp. minced onion
1/4 cup chopped parsley
1 large garlic clove minced

2 1/4 tsp. salt
1 1/4 tsp. basil leaves
1/2 tsp. ground black pepper
3 large eggs beaten
2 tsp. olive oil
2 tbsp. fine, dry bread crumbs
1/2 lb. Ricotta cheese

Directions:
Directions:
Combine the first 6 ingredients. Add 2 tsp. of salt, 1 tsp. basil leaves, 1/4 tsp. black pepper, and 2 eggs. Mix well. Brush bottom and sides of 9 x 5 x 3 inch loaf pan with oil and fine dry bread crumbs. Put 1/2 of the meat mixture in pan and spread uniformly over the bottom.

Mix remaining salt, basil, black pepper, and egg with Ricotta cheese. Spread over meat. Top with remaining meat mixture being sure to spread it to the sides of pan to completely cover cheese. Bake in preheated 350º F. oven for 1 hour or until done. The Ricotta cheese makes its own sauce to be spooned over meat slices.
