1 - 8 oz. fresh salmon steak
1½ tsp. fresh dry rub seasoning of your choice (I like to use Old Bay)
3 red potatoes, blanched and cut in half
½ red bell pepper, cut in wedges
6 mushrooms, halved (optional)
1 lb. medium red onion, cut into wedges
½ yellow squash, cut into wedges
½ zucchini (depending on size)
½ tsp. seasoning salt
1 T. olive oil
2 lemons

Directions:
Directions:
1. Soak plank in water for at least four hours. Preheat oven to 375º F.
2. Toss together potatoes, bell pepper, mushrooms, red onion, squash and zucchini with seasoning salt and oil.
3. Coat both sides of salmon with the dry seasoning (Old Bay) and place on center of cedar plank. Add vegetables around
salmon and squeeze juice from on lemon over the top.
4. Place the plank in the oven for 8 minutes, then remove from oven and turn salmon over. Roast for an additional 8
minutes or until it reaches an internal temperature of 120º to 130º. Remove plank; garnish with lemon slices and serve.

I see no reason why this recipe would not work on the outdoor grill. The cedar plank really does add a special flavor. It is so very good and the veggies are delicious, too. Also, it's a pretty low-fat meal. We must have one of those on occasion!
