12 medium potatoes
4 eggs, well beaten
1/2 c. milk
2 TB flour
salt
1 tsp. sugar

Directions:
Grate potatoes. Add beaten eggs, milk, flour, salt; mix together. Drop by tablespoonfuls onto oiled frying pan. Spread quickly as thin as possible. Fry until golden brown. Turn and finish frying.

Mom made this as a side dish when we were growing up. We always ate it with ketchup spread on top. When Lisa went on her mission, the first week she was in Germany she went to the doctor, who also happened to be a member, who fed her and her companion dinner. Potato pancakes were on the menu, and she was very surprised that something her mom had cooked in America would be a German dish. Later on Lisa remembered her great-great grandmother, Hildor Kay was from Norway and her husband was from Sweden. This was a dish eaten in many of the European countries, and must have been passed through the generations to Grandma Heaton and then to mom. There are lots of variations to this recipe -- Dean's mom grinds the mixture in a blender/food processor to make a finer batter. Germans eat it with applesauce. Grandma Eda sprinkled them with sugar and rolled them up.
