1 lb stew beef, cubed
3 tbsp flour
1 medium onion, diced
1 can (14 oz.) beef broth
2 cans (14.5 oz.) stewed tomatoes
2 cans (14.5 oz.) whole potatoes, drained and cubed
1 can (14.5 oz.) mixed vegetables, drained
peas, carrots, potatoes, corn

Directions:
Directions:
Combine meat and flour in a plastic bag, toss to coat.
Brown meat in tbsp of oil in a 6 quart pot; drain.
Add onion. Cook until tender. Season with salt and pepper, if desired.
Add tomatoes and broth. Bring to boil; reduce heat. Cover and simmer for 45 minutes or until beef is tender.
Add vegetables, cook uncovered 5 minutes.
