Combine and shape into loaf:

1lb. ground beef
1 egg yoke
2 T parsley
2 T bread crumbs
1 t lemon juice
1 t salt
½ t pepper
¼ c onion, diced

Preheat oven to 350º

Place loaf in lightly greased pan. Bake about 30 mins, make indentation on top and put 2 T of salsa. Bake another 10 mins.

Handle ingredients lightly, mixing with a two-tined fork. Be sure to cook thoroughly, but not overcook, firm but not dry! All ovens are different so keep an eye on it! Check the middle after 30 mins, if still a little red you can leave in turned off oven, it will continue to bake. This recipe will make a small loaf enough for two!
