Ingredients: Part 1: 4 (15 oz) cans- Chili with Beans 1/4 of (1 pound) - Loaf Processed Cheese Food, (Velveeta) thinly sliced 1/8 Cup- Sugar / or Sweetener Equivalent 1 -Onion (finely diced) 1 can - Whole Kernel Corn (drained well) 1 can- Diced Tomatoes (drained well) 1 - Bell Pepper (finely diced) Part 2: 2 (8.5 ounce) package- Cornbread Mix (Jiffy /etc) 1 1/2 cups water

Directions: Preheat oven to 400 degrees F (200 degrees C). Spray a 9x13-inch baking dish with cooking spray. Mix (top 6 ingredients) together. Spread this chili mixture evenly over the bottom of the dish. Arrange processed cheese in a single layer over the chili. Mix- cornbread mixture with water in a large bowl until smooth. (if using "Jiffy Cornbread Mix" you may want to leave out the sugar in the chili mixture because the "Jiffy Mix" is already sweet) Spread evenly over processed cheese. Bake in the preheated oven until chili is heated through and cornbread topping is golden brown and cooked all the way through. About 45 minutes -1 hour (keep a check on it.) |

Notes: The best Chili I ever had. The "sugar" sounds odd but it brought out all of the flavors in the other ingredients amazingly !! This is great for a whole bunch! Just throw a salad together and a simple dessert and you have a great meal!
Note : If you prefer " Hot Chili"....buy "hot" instead of regular, or make your own from scratch. Also if you're going to make this dish you might prepare your "Chili Mixture-Part 1" and refrigerate it overnight, so all flavors can blend together. This saves time later when you are preparing to bake it.
