3 T. butter
3 T. plain flour
2 cups milk
6 hard boiled eggs, chopped
1/2 cup mayonnaise
1/4 teaspoon salt
1/8 teaspoon pepper
Buttermilk cornbread
1 1/4 c. shredded cheese
8 slices bacon, cooked & crumbled
1/3 c. chopped green onion

Directions:

Melt butter in a heavy saucepan over low heat, add flour stirring until smooth. Gradually add milk, stirring constantly, until mixture is thick and bubbly. Stir in chopped egg whites and next three ingredients. Cook until thoroughly heated.
Cut buttermilk cornbread into 6 rectangles and split each rectangle in half horizontally. Cut each half into 2 triangles. Arrange 4 triangles, cut side up on each plate. Spoon egg mixture evenly over cornbread. Sprinkle evenly with cheese, bacon and green onions.
