2 lb ground beef
1 envelope taco seasoning (1/4 cup)
1 cup water
2 cups cooked rice
1 can refried beans
2 cups shredded cheese, divided
10 - 12 flour tortillas
2 cups salsa
1 can condensed cream of chicken soup, undiluted

Directions:
Directions:
Cook beef, drain. Stir in taco seasoning and water. Bring to a boil. Reduce heat, simmer, uncovered for 5 min. Make rice or use left over rice to equal 2 cups cooked rice. Stir rice into meat mixture. Cook and stir until liquid is evaporated. Remove from heat. Spread about 2 Tbsp of refried beans, 1/4 cup beef mixture and 1 Tbsp cheese down the centre of each tortilla, roll up. Place seam side down in greased 9 X 13 dish. Combine salsa and soup, pour over enchiladas. Sprinkle with remaining cheese. Bake casserole, uncovered at 350º for 20 minutes or heated through and cheese is melted.
