6 oz. softened cream cheese
1 T. softened butter
4 c. powdered sugar
1 c. shredded coconut
1 tsp. vanilla

1 T. shortening
2 c. semisweet chocolate chips

Directions:
Directions:
Beat cream cheese and butter until blended. Add powdered sugar, coconut, and vanilla. Beat until well mixed. Refrigerate 1 hour or until easy to mold with hands.
Prepare a baking sheet by lining with wax or parchment paper. Dust your hands with powdered sugar and mold mixture into egg shapes. Place on prepared baking sheet. Place in freezer 2 hours or until eggs are firm.
Melt chocolate chips and shortening in microwave by heating for 30 seconds; stir and repeat, if necessary. Dip eggs into melted chocolate mixture; place back on prepared pan. Refrigerate until hardened.
You may add decorations, if desired.
