2 C. pineapple juice
1 (16 oz.) can pineapple chunks
¾ C. brown sugar
¾ C. white sugar
1 tsp. ground ginger
½ tsp. red food coloring (opt.)
1 green pepper, chopped
1 yellow onion, chopped
¾ C. vinegar
½ C. soy sauce

½ C. corn starch
½ C. water

Directions:
Directions:
1. In a saucepan, mix together all ingredients except corn starch and water. Bring to a boil.
2. Whisk corn starch and wather together, then add to boiling mixture. Heat until thickened.
3. Serve warn or refrigerate.

Makes approximately 4 cups.
