Glaze for Lemon Dream Bars


Ingredients:  
Ingredients:  
⅓ c. butter
1 c. sifted flour
2 tbsp. sugar

Combine
2 beaten eggs
½ c. firmly packed brown sugar
¾ c. chopped coconut
½ c. chopped nuts (pecans, walnuts to your taste)
¼ tsp. salt
⅛ tsp. baking powder
½ tsp. vanilla

Directions:
Directions:
Cut butter into flour and sugar until fine.
Press mixture firmly into ungreased 11"X7", 9"X9" or 8"X8" pan.
Bake at 350º for 15-20 minutes until set but not brown.
Combine eggs. brown sugar, coconut, nuts of your choice, salt, baking powder and vanilla.
Mix well and spread on partially baked dough.
Bake at 350º for 25-30 minutes.
Combine 2 tsp. grated lemon rind, 2 tbsp. lemon juice and 1 c. sifted powdered sugar.
Mix until smooth.
Frost by spreading lemon mixture on baked bars while still warm.
Cool in pan, cut into squares or diamond shape, remove from pan.

This has been one of my go-to recipes for 50 years or so. I like the tartness of the lemony glaze with the sweetness of the cookie. Don't let the steps frighten you, this is not a difficult recipe.
