5 pounds Yukon Gold potatoes
4 cans cream of chicken soup
16 oz sour cream
4 bunches green onions
4 oz butter
grated cheddar

Directions:
Directions:
Boil potatoes with skins on. Peel and cube or grate when cool.

Mix sour cream, soup, green onions, and butter (sliced and dotted over potato mixture).

Add salt to taste. (1-2 tsp kosher salt).

Stir into potatoes until potatoes are evenly coated with mixture.

Pour mixture into buttered casserole and top with cheddar. Optional: top with buttered bread crumbs on top of cheese.


Cook until bubbly in 400º oven for 45 min to 1 hour.

Can assemble ahead and cover with plastic wrap and store overnight in freezer before baking.. Bring to room temperature at least 1-2 hours before placing refrigerated glass casserole in hot oven.
