Rice Pudding Recipe

1/2 gallon milk
1 cup sugar
1 cup rice
3 eggs, separated
1 tsp. vanilla
1 pint heavy cream
1/8 tsp. salt (optional)

*If you split the recipe in half you still need to use 3 eggs.

Directions:
Directions:
In a large pot combine rice, milk, and sugar. Cook over low/med. flame stirring frequently. Cook about 45 min. until tender. While rice is cooking, beat egg yolks, cream, and vanilla together - refrigerate. When rice is tender, remove from heat and slowly add refrigerated mixture. Resume cooking until mixture thickens; remove from heat. Whip egg whites until stiff, fold into pudding. Pour pudding into bowl. Allow to cool before putting in refrigerator. Sprinkle top with cinnamon. DO NOT cover until completely cool. Serve.
