I dozen eggs
I (8-ounce) carton cottage cheese
I (8-ounce) package cream cheese, cut into small cubes
8-ounces of grated Monterey Jack Cheese

Directions:
Directions:
In a large bowl, whisk eggs together. Blend in cottage cheese and grated Monterey Jack, blending well. Spray 3-quart round or rectangular baking dish with non-stick cooking spray. Pour mixture into dish. Bake at 3500 for 45 minutes, or until a knife inserted in center comes out clean.

(Good if you are on Sugar Busters or Adkins Diet)

Can also add mushrooms, onions, green peppers or any other vegetable if desired.
