1 dozen eggs
1 tsp salt
1 tsp vinegar

Note: For ease in peeling, eggs should be 1-2 weeks old. Fresh eggs are harder to peel.

Place eggs in a single layer in a large saucepan. Cover them with cold water by 1 inch. Add salt and vinegar to the water. (If only cooking a few eggs in a small pan, use half the amount of salt and vinegar) This will keep the whites of the eggs from leaking out should an egg shell crack. Slowly bring water to a boil over medium heat. When the water has reached a boil, cover and remove from heat. Let sit 20 minutes. Transfer eggs to a colander and place under cold running water to stop the cooking. Eggs can be peeled and served immediately, or refrigerated for later use.
