3T. Flour
1pinch salt
3 Eggs
1 Lemon
1 c. Milk

Directions:
Directions:
In small bowl put sugar, flour, and salt. Separate eggs and put egg whites in large bowl, egg yolks in medium bowl. Grate lemon rind into 9" pie plate and add the juice of the lemon. Beat egg whites. Beat egg yolks. Ad sugar and flour mixture to egg yolks and add milk.. Add lemon juice and rind to the yolk mixture. Fold yolk mixture into egg whites. Pour into 1 quart casserole. Wash pie plate and put 1" hot water into it and set pudding in plate. Bake at 325 degrees for 30 minutes.
