1 (15.5 ounce) can black beans, drained
1 (15.5 ounce) can black-eyed peas, drained
1 (14.5 ounce) can diced fire roasted tomatoes, drained or 3 Roma tomatoes
1 can corn, drained
1/2 medium red onion, chopped
1/2 bell pepper, finely chopped
2-3 jalepenos, diced small
2 ripe avocados, diced-- leave for when you serve if making recipe ahead
1/3 cup chopped cilantro

Dressing
2 Tbs olive oil
1 Tablespoon lime juice fresh preferred
1 Tablespoon red wine vinegar
1 teaspoon salt
1 teaspoon pepper
1 teaspoon garlic powder
1 teaspoon cumin
1 teaspoon chili powder

Directions:
Let red onions sit in the red wine vinegar for 10 minutes. Add oil and seasonings. Mix beans, peas, tomatoes, corn, onion, bell pepper, and jalapeno peppers in the large bowl. Add cilantro; toss to coat. Refrigerate for 20 minutes or until ready to serve.
