3 eggs beaten
2 cups sugar
1 cup vegetable oil
3 tsp. vanilla

3 cups flour
1 tsp. baking soda
1 tsp. salt
3 tsp. cinnamon

2 cups grated zucchini
1 cup chopped walnuts (optional)
1/2 cup raisins or chocolate chips

Directions:

Mix dry ingredients with wet, then add zucchini, walnuts, and raisins. Place in 2 greased loaf pans depending on the size of the pans. Bake at 350º or until done (about an hour).
