1¼c. whole wheat flour
1¼c. high fibre bran cereal
1tsp. baking soda
1tsp. baking powder
1tsp. cinnamon
½tsp. nutmeg
½tsp. salt
2 eggs
1c. grated carrots
¾c. buttermilk
⅓c. firmly packed brown sugar
¼c. vegetable oil
½c. raisins

Directions:
Directions:
In a large bowl, combine flour, cereal, baking powder, baking soda, and spices.
In a separate bowl, beat eggs thoroughly; blend carrots, buttermilk, brown sugar, and vegetable oil. Add to dry ingredients, stirring just until moistened. Stir in raisins.
Spoon batter into muffin tins lines with paper baking cups, filling about ¾ full. Bake in 400ºF oven for about 20 minutes, or until tops of muffins spring back when lightly touched.
