1 lb. fatback
6 - 8 medium Irish potatoes, peeled
5 - 6 medium onions
4 lbs. catfish filets
2 cans niblet corn
2 cans tomato soup
1 large can tomato paste
2 quarts milk (½ gallon)
hot sauce
ketchup
Worcestershire sauce
2 sticks butter
salt & pepper to taste
saltine crackers

Directions:
Directions:
1. Fry fatback and reserve grease.

2. Chop potatoes in food processor.

3. Chop onions in food processor.

4. Add fatback grease, potatoes, and onions to crockpot. Cover in water and cook on high for 8 - 10 hours.

5. Add catfish to dutch oven and cover with water. Cook until done.

6. Once fish is done, add corn, tomato soup, tomato paste, milk, potato/onion mixture, and butter. Cook on low to medium heat. Also add in hot sauce, ketchup, Worcestershire sauce, salt & pepper to taste.

Serve with saltine crackers
