1 lb lean ground beef
2 onions chopped
1/4 c rice
1 c diced canned or fresh tomatoes
1/4 diced celery
2 carrots diced
2 small pototoes diced
2 tsps salt
1/2 tsp pepper
1 c water

Directions:
Directions:
Preheat oven to 350º
Brown beef in skillet.
Add remaining ingredients.
Mix well until blended
Spoon mixture into 3 qt casserole
Cover and bake for 1 1/2 hrs or until rice & vegetables are tender
