1 lb chicken tenders
1/2 lb sliced mushrooms
2 sticks unsalted butter
1 quart beef stock
1 1/2 cups Taylor Marsala wine
2 cups flour
1 Lemon
Lemon pepper
Salt
Pepper

For Gravy:
1/4 cup cornstarch
3/4 cup water

Directions:
Directions:
Place tenders in a piece of Saran Wrap and pound with tenderizing mallet to flatten, repeat with other tenders.
Combine Lemon pepper, salt and pepper in flour, dredge tenders in seasoned flour.

I use an electric non stick frying pan, melt butter, once butter is sizzling drop in the chicken
You'll want to have plenty of butter as it will suck it up.
Fry until just golden on both sides; tenders are thin so about 5 minutes a side.
Remove from pan and place in a warm oven.
Add your mushrooms to pan, increase heat and saute.
Add wine, scrape pan, reduce and add half stock.
Stir and taste. Squeeze a lemon into it. Add more broth or wine to your taste
Bring to heavy boil, add water and cornstarch stirring constantly until thickened.
Serve tenders and shroom sauce over angel hair pasta.
