3 c. flour
2 tsp. baking powder
½ tsp. salt
1 tsp. soda
2 c. sugar
2 tsp. cinnamon
3 eggs, beaten
1½ c. vegetable oil
2 tsp. vanilla
1 20 oz. can crushed pineapple, drained
1 c. chopped nuts
2 c. grated carrots

Directions:
Directions:
Stir together all dry ingredients.
Mix well - eggs, oil, vanilla and pineapple. Combine with dry ingredients.
Add nuts and carrots.
Pour batter into 3 9" greased and floured pans.
Bake at 300º for 45 minutes to 1 hour. Adjust time if needed.
 

Frosting

1 8 oz. package cream cheese, softened
1 16 oz. box powdered sugar
1/2 stick margarine or butter, melted
2 tsp. vanilla

Directions:
Directions:
Soften cream cheese and beat with margarine/butter.
Add sugar and vanilla and beat until smooth.
Frost cooled cake. Nuts may be added if desired
