2 tsp. butter
1 tbsp. extra-virgin olive oil
1 onion diced
1 medium red bell pepper, chopped
2 garlic cloves, minced
8 - 10 ears grilled corn
2 ham steaks grilled
2 c. heavy cream
1/4 c. all purpose flour
2 large red potatoes, well scrubbed and diced
6 sprigs fresh thyme, leaves only
4 c. vegetable or chicken stock
Salt and pepper to taste

Heat the butter and 1 tbsp. olive oil in soup pot over medium heat. Add the onion, garlic, and red bell pepper, cook until vegetables are tender, 8 - 10 minutes. Dust the vegetables with flour and stir to coat everything well, brown a little. Pour in the vegetable or chicken stock and bring to a boil, add thyme leaves, cream and potatoes, bring to a boil and boil hard for about 7 minutes until the potatoes start to break down (this will help thicken the soup).

Cut the grilled corn kernels off the cob and dice the grilled ham and add to the soup. Season with salt and pepper, simmer until heated.
