1 medium pie pumpkin (2-4 pounds)

1. preheat oven 400ºF
2. wash the outside of pumpkin
3. pierce the pumpkin with sharp knife in several places.
4. bake 45-60 min. The pumpkin is done when sharp knife easily pierces it.
5. when it is cool enough to handle, cut in half
6. scoop out and discard seeds (save to roast)
7. Scoop flesh into bowl/
8. mash with potato masher.
9. If you're not using puree right away , store in a tightly sealed
container in refrigerator for up to 3 days or freezer up to 3 months.
