4 cups carrots, onions, garlic, kale (or other combination of veggies depending on what you have on hand

salt and freshly ground pepper

Directions:
Directions:
1. wash and roughly chop all vegetables
2. Put Vegetables in a stockpot and cover with water (tops of veggies should be covered with at least 3 inches of water.)
3. Bring to boil, cover stockpot, and reduce heat. Simmer for 30-40 minutes or until veggies are tender.
4. Transfer mixture, in batches, to a blender and blend thoroughly.


(Can be used as a base for soup, veggie meatballs, vegan mac,n, cheese or enrich other sauces)
