2 Eggs
Black beans or refried beans
Grated mexican cheese blend
Sour cream or crema
Soft tortillas
Optional toppings:
Black olives
Mushrooms
Scallions
Tomatoe

Directions:
Directions:
If using black beans drain and season as desired. I use some cilantro, red pepper flakes, and garlic powder. Heat in microwave until hot. Mash beans to desired consistency (they should resemble refried beans.) If using refried beans just heat the beans. You can use both too.

Heat salsa in olive oil. Add eggs and poach to desired doneness.

While poaching the eggs, warm a tortilla or two either in a skillet or over a gas flame. Place warmed torilla(s) on plate, top with some beans and cheese. Place eggs with salsa over beans and cheese. Top as desired.
