3 Italian sausage links (or 3/4 lb. ground beef, or combo)
3 cloves garlic
1 onion minced
2 tbsp. olive oil
1 28 oz. can crushed tomatoes
1 15 1/2 oz.can small diced tomatoes
1 carrot peeled and cut in 1 1/2" pieces
1 bay leaf
1 tsp. oregano
1/2 tsp. basil
1/2 tsp. rosemary or 2 small sprigs fresh
1/4 tsp. thyme
dash red pepper
freshly ground black pepper to taste
1/4 cup red wine

Sauté onion and garlic in olive oil. Remove and put in large pot. Take sausage from casings and cook. Add all ingredients to large pot, bring to boil, lower heat to simmer, cover and cook for at least one hour.

Good with 1 - 1 1/2 lbs. pasta

Always use fresh herbs if available.
Can also use tomato paste diluted with water, and fresh Roma tomatoes may be used.
Pork ribs can be used for the meat.
