6 slices bacon
6 eggs
¼ cup milk
2 cups assorted sliced and sautéed veggies (onion, pepper, mushrooms, asparagus)
1 tbsp chopped fresh herbs (thyme, parsley, basil)
Salt and pepper to taste
1 cup shredded cheddar cheese

Directions:
Directions:
Preheat oven to 350º.

Line 6 non-stick muffin tins with bacon.

Beat together eggs and milk. Pour mixture into muffin tins and top with desired toppings. Sprinkle with herbs, salt and pepper.

Bake 15-20 minutes or until mixture is set.
