1 # chorizo, loose and cooked
1 large onion, chopped
1 # mushroom sliced
1 cup drained salsa or ro-tel
1 cup sour cream
10 eggs
1 cup shredded cheddar
1/3 cup heavy cream
salt & pepper

Directions:
Directions:
Preheat 425º. Brown sausage about 5 minutes. Add onion, cook 5 more minutes. Add mushrooms. Cook 5 more minutes.
Blend drained salsa and sour cream. Add to sausage mixture. Bring mixture to a simmer then pour into greased 10x13 glass baking dish. Sprinkle 1/2 c of cheddar. Then in separate bowl crack eggs and beat with cream until blended. Salt and pepper. Pour over sausage mixture. Top with remaining cheese.

Bake 15 minutes at 425º. Reduce heat to 300 for 10-15 minutes.
