1 lb. carrots, peeled
2 tsp. Dijon mustard
1 tbsp. fresh squeezed Lemon juice, from one lemon
1½ tbsp. vegetable oil
1½ tbsp. Extra virgin olive oil
1 - 2 tsp. honey, to taste
¼ tsp. salt, heaping
¼ tsp. fresh ground black pepper, to taste
2 tbsp. chopped fresh parsley
2 finally sliced scallions (or 1 tbsp.finely chopped shallots)
Handful of dried cranberries ( optional)

Grate the carrots in a food processor. Set aside.
In a salad bowl, combine the Dijon mustard, lemon juice, honey, vegetable oil, olive oil, salt and pepper. Add the carrots, fresh parsley and scallions ( or shallots) and toss well. Taste and adjust seasoning if necessary. Cover and refrigerate until ready to serve.
