½ cup butter
1 cup self rising flour
¾ cup sugar
3 slightly beaten eggs
¾ cup milk
4 cups sliced fresh peaches
14 Keebler Sandies shortening bread cookies (broken or mashed into crumbs, this is about ½ a pkg)
¼ cup firmly packed brown sugar
Cinnamon
(Pampered Chef Cinnamon Blend, optional)

Directions:

Melt butter in the bottom of a 2 qt. baking dish. Combine flour, sugar, eggs and milk; mix well. Pour over butter in the baking dish.

Place peaches on top of the flour mixture. Do not stir. Now sprinkle the cookie crumbs in an even layer, falling right into the dough and peach mixture.

Bake in a pre-heated 300º oven for 15 minutes. Sprinkle with brown sugar and cinnamon blend. Increase heat to 350º and continue baking for 30 minutes or until toothpick inserted comes out clean.

Serve hot topped with vanilla or peach ice cream.
