1 cup yellow corn meal
1/3 cup flour
2 tsp. baking powder
½ tsp. salt
2/3 cup milk
1 egg beaten
3 tbsp vegetable oil or shortening
1 tsp. sugar (for sweet cornbread)

Directions:
Directions:
Pre-heat oven to 450º. Grease with shortening or spray with non-stick cooking spray one 8-inch oven skillet or square pan. Place in oven for 7 to 8 minutes or until hot.

Combine cornbread meal and dry ingredients in a bowl. Add milk and egg; stir. Add oil or shortening; mix thoroughly. Pour into hot skillet or pan. (2/3 full if doing muffins or corn sticks)

Bake 20-25 minutes. Edges should be crispy.
