Roasted beets

3-4 medium fresh beets, washed and trimmed

Directions:
Directions:
1) Preheat the oven for 400ºF.
2) Wrap the beets in foil packets and roast in the oven until tender, about 1 hour.
3) Open the foil packets and let cool.
4) Once cool enough to handle, peel using a paper towel, then cut into chunks.
 

Salad dressing and assembly


Ingredients:  
Ingredients:  
1/4 c. extra-virgin olive oil or avocado oil
2 tbsp. red wine vinegar
1 tbsp. honey
1 tbsp. onion, minced and sauteed
1/2 tsp. Dijon mustard
3-4 c. baby spinach
1/2 c. crumbled goat cheese
1/2 c. chopped walnut

1) In a medium bowl, add the oil, vinegar, honey, onions and mustard.
2) Whisk together.
3) Add the beats and spinach to the dressing and toss to coat.
4) Top with goat cheese and walnuts.
