1 1/4 cup whole wheat flour
3/4 cup rolled oats
1 tsp. ground cinnamon
1/2 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. salt
1/2 cup butter, softened
1/2 cup peanut butter
1/4 cup brown sugar
2 Tbsp. honey
1 egg
1 tsp. vanilla extract
1/2 cup almonds
1/3 cup pumpkin seeds
2 Tbsp. flax seed
1/2 cup dried cranberries

Directions:

Preheat oven to 350º. Grease 2 baking sheets.

Whisk together flour, oats, cinnamon, baking soda, baking powder and salt. Set aside. In a large bowl, beat butter, peanut butter, brown sugar and honey until smooth. Add egg and vanilla and beat until combined. Add flour mixture and stir until just combined. Gently mix in almonds, pumpkin seeds, flax seeds and cranberries.

Roll dough into balls, about 2 Tbsp. at a time and place on baking sheets, spacing 1 inch apart. Flatten each cookie slightly. Bake until golden brown, about 10 minutes. Cool on pan for 5 minutes.
