3 cups unbleached all-purpose flour (bleached flour toughens baked goods)

1 1/2 cups sugar

2 teaspoons baking powder

1 teaspoon salt

1 teaspoon cinnamon

4 large eggs

1 1/4 cups canola oil

2 1/2 cups fresh strawberries, sliced and slightly mashed

Directions:

Preheat oven to 425 degrees

Combine dray ingredients in a large bowl.

In a small bowl, combine the eggs and oil. Mix well.

Stir strawberries into egg mixture.

Blend in flour mixture until thoroughly combined, but do not overbeat.

Spoon into greased muffin tins until nearly full.

Bake at 425 degrees for 5 minutes.

Reduce heat to 350 degrees and bake an additional 10-19 minutes or until a toothpick inserted in the center comes out clean.
