2 cartons of chicken broth
2 stalks of lemongrass, ends trimmed, chopped roughly
1 can of coconut milk (the fattiest version you can find)
1 lb boneless chicken breasts, sliced thinly against the grain
1 lb mushrooms, sliced
1 tbsp. fish sauce
1 tbsp. lime juice
hot red chilis (4 for Michael, none for Grace, I might add shirracha sauce)
Handful of fresh cilantro leaves, chopped

Directions:

Simmer stock and lemongrass for a few minutes.
Add the coconut milk and chicken.
When the chicken is cooked add the mushrooms. Some like the mushrooms firm, some more tender.
Remove from heat, serve with fish sauce, lime juice and chilis. Add to taste!
