3/4 lb chicken livers
salt and pepper to taste
1 small bay leaf, broken into pieces
1/8 t. thyme
1/8 t. allspice
1/8 t. cinnamon
pinch cayenne
1/4 lb butter
1/2 cup thinly sliced shallots
6 ox. mushrooms, thinly sliced (about 2 cups)
1 T. cognac
chopped raw onions (optional)

Directions:
Directions:
Mix liver with salt, pepper, bay leaf, thyme, allspice, cinnamon, and cayenne. Heat butter. Add shallots and mushrooms. Cook, stirring often until mushrooms give up their liquid and mostly evaporates. Add liver and stir, Cook stirring occasionally, about 10 minutes. Pour into processor, add cognac and blend to a fine puree. Place in a small serving dish, smooth out the top with a rubber spatual. Cool, then chill. Serve with thinly sliced rye bread and chopped onion on the side. Makes 2 cups.
