2 cups sugar
4 eggs
1 1/2 cup salad oil
2 cups flour
2 tsp. baking soda
1 tsp. salt
3 cups grated carrots
2 tsp. vanilla

Cream Cheese Frosting:

1 (8 ounce) package cream cheese
1 cube butter
1 package powder sugar, (2 to 2 1/2 cups)
1 tsp. vanilla

Directions:
Directions:
Preheat oven to 325º.

Beat until smooth; sugar, eggs & oil. Add flour, baking soda & salt. Then stir in carrots and vanilla.

Pour into lightly greased 9 X 13, two 9-inch or three 8-inch pans. Bake for 35-40 minutes for the 9 X 13 and 9-inch pans and 25-30 minutes for the 8-inch pans (cupcakes too). Insert toothpick. It should come out clean.

Let cakes cool for 10 minutes in the many and then remove to a cooling rack and let cool completely.


Frosting:

Beat butter and cream cheese until nice and fluffy. Add in the vanilla and powdered sugar and beat until fluffy and smooth.
