1 chicken cut up or 4-5 chicken breasts
1 cup flour
2 tsp. salt
1/4 tsp. pepper
1/4 cup butter
1/4 cup shortening

Lemon Sauce:
1 clove garlic
1/2 tsp. salt
1/4 cup olive oil
1/4 - 1/3 cup lemon juice (2 lemons)
2 tbsp. finely chopped onion
1 tsp. black pepper
1/4 tsp. ground thyme

Directions:
Directions:
Heat oven to 425º F. Mix flour, salt, pepper and paprika in plastic bag. Put shortening and butter in 13 x 9 x 2" oblong baking pan and set in oven to melt. Shake one or two pieces of chicken at a time in bag to coat thoroughly. Place chicken, skin side down in single layer in hot shortening. Bake 30 minutes and turn chicken skin side up and bake another 15 minutes. Pour lemon sauce over and continue baking 15 minutes longer or until tender.

Lemon Sauce: In small bowl mash garlic clove and salt. Add remaining ingredients and mix well remaining ingredients.
