½ lb chicken feta spinach sausage
½ box Banza Penne Pasta
8 c. salted water
1 tsp. coconut oil
2 tsp. olive oil
1 avocado
1 garlic clove
5 sprigs cilantro
2 sprigs basil
1 tsp. sea salt
1 tsp. freshly ground pepper
½ tsp. onion powder
1 lime
8 cherry tomatoes
½ c. fresh shredded Parmesan

Directions:

Bring large pot of salted water to a boil, add half Banza penne package and cook according to package.
Reserve ½ cup of pasta water for use in avocado pesto. Drain the rest and set aside.
In a high speed blender or food processor add avocado, garlic clove, cilantro, basil, salt, pepper, onion powder,
and juice of 1 lime. Blend and slowly pour in olive oil until you have a thick but smooth consistency.
Bring pan to medium high heat, add coconut oil and chicken sausage. Mix with a wooden spoon and break sausage apart as it cooks. Once chicken is fully cooked lower heat.
Stir in pasta, add avocado pesto and slowly add in reserved pasta water until the sauce is no longer thick but smooth and saucy. Stir until desired thickness.
Serve warm and garnish with halved cherry tomatoes and Parmesan cheese.
