Cake:
3 Cups flour
2 cups sugar
2 teaspoons baking soda
1 teaspoon baking powder
½ teaspoon salt
10 tablespoons unsweetened cocoa powder
⅔ cup vegetable oil
2 cups water
2 tablespoons white vinegar
2 teaspoons vanilla

Frosting:
1 stick butter at room temperature
3 cups confectioner's sugar, sifted
⅓ cup unsweetened cocoa powder
5-6 tablespoons strong coffee

Cake: Preheat oven to 350º. Grease and flour two 9-inch round baking pans. May also be made as cupcakes; however, this cake is not as good when prepared as a sheet cake. Combine all ingredients and blend well with an electric mixer--about 2 minutes. Bake until a toothpick inserted in the center comes out clean--about 45-60 minutes. Cool 5 minutes then remove from pans. Cool completely, then frost.

Frosting: Blend butter with electric mixer until fluffy. Add remaining ingredients and beat at low speed until well incorporated. Increase speed to medium and continue beating until frosting is fluffy, about one more minute.
Personal Notes: This recipe is a much loved tradition in the Driscoll family. It was passed down to me by my sister-in-law, Sherry Christie, who got it from her mother--my mother-in-law, Gerry Driscoll. This was her mother's recipe from the 1930's. When my husband and his siblings were growing up, this was the only cake ever served for birthdays and special occasions. Its still a family favorite and gets rave reviews. NOTE: No eggs were used as they were in short supply during the depression.
