1 Rotisserie chicken, skinned and cut up into small cubes
2 c. fresh Basil leaves
4 large cloves of garlic, minced
1 1/2 c. olive oil
1 tsp. salt
16 oz. Penne pasta
1 pint cherry tomatoes cut in half
1 large red onion, chopped
1 lb. sliced mushrooms
2 T. olive oil
Parmesan cheese to taste

Directions:
Directions:
Cook pasta in salted water according to package directions.
In a blender, place basil, garlic, salt and olive oil. Blend for about one minute, until well combined to make pesto sauce.
Sauté mushrooms in one Tbsp. of olive oil and set aside. In the same pan sauté onion until tender, then add mushrooms, chicken and tomatoes, cook until tomatoes are heated through, but not cooked.
Drain cooked pasta, and then add vegetable-chicken mixture and pesto sauce. Mix well. Serve with a sprinkle of Parmesan cheese. Enjoy!
