1 c. semolina flour
1 c. all purpose flour
2 whole eggs
1 egg yolk
1 tbsp. salt
1 tbsp. oil ( add truffle oil instead of regular oil for more flavor)

Equipment that you will need:
-Wooden cutting board/ surface area
-Fork
-Bowl or plastic wrap
-Dough Cutter
-Clean towel
-Pasta Machine
-Extra semolina flour
-Sheet pan
1. Mix the salt, semolina, and all purpose flour together on your wooden surface.
2. Create a well in the middle of the flour mixture.
3. Add the eggs and the egg yok to the center of the well of flour along with the oil.
4. Begin to whisk the eggs and oil witht he fork and gradually adding in the sides of flour to the middle until you are able to mix the pasta dough with your hands.
5. Knead the dough gently until it all comes together.
6. Cut the dough into 4 equal parts.
7. Then, cover the dough with the plastic wrap seperately and let res for 30 minutes.
8. While you are waiting for the dough to rest, begin to set up your pasta machine.
9. Begin to run the pasta dough though the pasta machine.
10.Running it throught the pasta machine once on one setting and then folding the dough over itself and running it through the pasta machine again.
11.Continue to run the dough through machine changing the setting each time will you get to the last setting.
12.Once rolled out flour the pasta, roll it up, and cut it into pieces, unravel, flour again and place onto the sheet pan with a little semolina flour under it.
13. Once you are done rollling out all the dough, you can cook to how you like.
