For a 9 - Inch Pie:

For a 9 " Pie:

1¾ can of mashed cooked or canned pumpkin
½ tsp. salt
1¾ cups Milnot© (or 1¾ cups milk)
3 eggs
⅔ C. brown sugar, packed
2 T. granulated sugar
1½ tsp. cinnamon
½ tsp. ginger
½ tsp. nutmeg
½ tsp. clove

Directions:

1. Heat oven to 425º F. (hot).
2. Beat all ingredients together with electric mixer.
3. Pour into pastry-lined pie pan. (For crispness, have bottom pastry a little thicker than ⅛ ".)
4. Bake 45 - 55 minutes, or until a knife inserted in the center of filling comes out clean.
5. The center may still look soft but will set later.
6. Serve slightly warm or cold.

We enjoy this pie every Fall and sometimes again in-between Seasons, too! According to my husband it, "melts in your mouth"! We always serve with a mound of whipped cream,Cool Whip or vanilla ice cream!
